“Finding out that our oldest son was type 1 diabetic, after being rushed to the emergency room, was one of the most challenging, yet enlightening experiences ever.
Just like that, we were forced to switch it up and commit to a diet that was very different from what we'd known.
It became our mission to create a menu for our family out of plant-based foods that were as tasty and satisfying as the foods that led us to one of the worst times of our lives.
We knew we had to change our diet and we had to do so in a way that consistently renewed our commitment to a healthier lifestyle.
It was in the moments where confusion, fear, hope, and determination intertwined that Greedy Vegan Catering was born.”
